Prepare Crust & Pecans
- Preheat oven to 350°F (175°C). Toast pecans on a baking sheet for 5-7 minutes until fragrant. Let cool, then chop 1 cup, leaving the rest whole for garnish.
- Crush chocolate sandwich cookies into fine crumbs. Mix with melted butter. Press two-thirds of the mixture into the bottom of a 3-quart trifle bowl. Reserve the rest.
Make the Layers
- In a large bowl, whisk instant chocolate pudding mix with cold milk for 2 minutes. Let it stand for 5 minutes to set.
- In a separate bowl, beat softened cream cheese until smooth. Mix in powdered sugar and vanilla. In another bowl, whip heavy cream to stiff peaks. Fold whipped cream into the cream cheese mixture.
Assemble the Lasagna
- Spread the set chocolate pudding over the cookie crust.
- Top with half of the cream cheese mixture. Sprinkle with the reserved cookie crumbs and the chopped toasted pecans. Drizzle with half of the caramel sauce.
- Spread the remaining cream cheese mixture on top. Drizzle with the remaining caramel sauce. Garnish with whole toasted pecans and mini chocolate chips.
Chill and Serve
- Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the dessert to set completely before serving.
Notes
Use Cold Ingredients: For the fluffiest whipped cream, make sure your heavy cream, bowl, and even the mixer beaters are very cold.
