Ingredients
  

Sorbet Base
  • 8 cups Fresh Watermelon Cubes approx. 1.2kg, frozen solid
  • 2 tablespoons Lime Juice 30ml, freshly squeezed
  • 3 tablespoons Honey or Agave Nectar 45ml
  • 1 pinch Sea Salt
Toppings
  • 2 leaves Fresh Mint per serving
  • 1 teaspoon Black Watermelon Seeds small, teardrop-shaped

  • 1 High-speed blender Or food processor
  • 1 Baking Sheet For freezing fruit cubes

Method
 

Preparation
  1. Arrange watermelon cubes on a baking sheet and freeze for 4-6 hours until solid.
  2. Combine frozen watermelon cubes, lime juice, sweetener, and salt in a blender. Pulse and then blend until a smooth icy frozen watermelon puree forms.
  3. Scoop three rounded balls into a chilled white ceramic bowl. Top with fresh mint leaves and scatter black seeds across the surface.

Notes

Use a seedless watermelon for ease, but add saved seeds back for the visual effect.
If the sorbet is too hard after long storage, let it sit at room temperature for 5-10 minutes.
