Grinder Ingredients
  • 4 Sub or Hoagie Rolls Fresh from the bakery if possible
  • 1/2 lb Genoa Salami Thin-sliced and folded
  • 1/2 lb Deli Ham Thin-sliced
  • 4 oz Pepperoni Large deli-style slices
  • 8 oz Mozzarella Cheese Shredded or sliced low-moisture
  • 1 tsp Dried Oregano Flakes
  • 1/2 tsp Crushed Red Pepper Adjust for heat preference
  • 2 tbsp Unsalted Butter Melted

Equipment

  • 1 Baking Sheet Large enough to fit 4 subs
  • 1 Parchment Paper Prevents sticking and catches oil
  • 1 Pastry Brush For applying melted butter

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with neutral parchment paper.
  2. Slice the sub rolls lengthwise (keeping a hinge) and brush the crust and interior with melted butter for a golden-brown finish.
Assembly
  1. Layer the folded genoa salami, thin-sliced ham, and pepperoni onto the bottom half of the rolls.
  2. Top the meats with a thick layer of mozzarella cheese. Generously sprinkle with dried oregano and crushed red pepper flakes.
Baking
  1. Bake for 8-12 minutes until the cheese is melted and bubbly with toasted brown spots and the bread is crusty.

Notes

Fold the salami to create height and pockets for the cheese.
Use low-moisture mozzarella to prevent the bread from becoming soggy.
