Ingredients
  

Rice Krispie Layer
  • 6 cups (160g) crisped rice cereal unfrosted
  • 10 oz (283g) mini marshmallows fresh
  • 1 cup (250g) creamy peanut butter do not use natural oil-separated
  • 4 tbsp (56g) salted butter
  • 1 tsp (5ml) vanilla extract
Topping
  • 2 cups (340g) milk chocolate chips high quality
  • 1 cup (150g) peanut butter cups roughly chopped

  • 1 9x9 inch baking pan Greased or parchment-lined
  • 1 Large heavy-bottomed pot

Method
 

Prepare the Base
  1. In a large pot over low heat, melt the butter. Add marshmallows and stir constantly until nearly melted.
  2. Stir in the creamy peanut butter and vanilla until smooth. Remove from heat immediately.
  3. Gently fold in the crisped rice cereal until evenly coated with the marshmallow mixture.
  4. Transfer to a prepared 9x9 pan. Gently pat down without packing too tightly to maintain a chewy texture.
Add Toppings
  1. Melt milk chocolate chips in the microwave in 30-second bursts. Spread in an even layer over the cereal base.
  2. Top with roughly chopped peanut butter cups, ensuring ridged edges are visible. Let set at room temperature.

Notes

Use low heat for marshmallows to prevent the treats from becoming hard.
