Grilled Kielbasa Sandwich with Caramelized Onions and Blistered Peppers

Ingredients
  

Sandwich Components
  • 14 oz Beef Kielbasa approx 400g, split and butterflied
  • 4 Hoagie Buns Long, white, sturdy buns
  • 2 large Yellow Onions approx 500g, thinly sliced
  • 1 large Red Bell Pepper sliced into thin strips
  • 1 large Green Bell Pepper sliced into thin strips
  • 2 tbsp Neutral Oil 30ml, like avocado or canola
  • 2 tbsp Unsalted Butter 28g, softened for buns
  • 1/2 tsp Kosher Salt plus more to taste

Equipment

  • 1 Outdoor Grill or Cast Iron Grill Pan
  • 1 Heavy Skillet For onions

Method
 

Prepare the Vegetables
  1. Heat 1 tbsp oil in a skillet over medium-low heat. Add onions and a pinch of salt. Sauté for 15-20 minutes until translucent and golden-brown.
  2. Toss pepper strips in remaining oil. Grill over medium-high heat for 5-6 minutes until visible blistered char spots appear.
Grill the Kielbasa and Buns
  1. Place butterflied kielbasa flat-side down on the hot grill. Cook for 3-4 minutes per side until dark black char marks form and meat is glistening.
  2. Butter the inside of the hoagie buns. Place face-down on the grill for 1 minute until edges are toasted brown.
Assembly
  1. Place the grilled kielbasa inside the toasted bun. Top with a generous pile of caramelized onions and charred peppers.

Notes

Butterfly the sausage to ensure maximum char and juice retention.
Slow-cook the onions for the best sweetness.
