Oreo Rice Krispie Treats: The Ultimate No-Bake Cookies and Cream Bars

Ingredients
  

Main Ingredients
  • 1/2 cup Unsalted Butter 115g
  • 10 oz Mini Marshmallows 283g (one standard bag)
  • 1 tsp Vanilla Extract 5ml
  • 1/4 tsp Sea Salt 1.5g
  • 6 cups Rice Krispie Cereal 160g
  • 20 standard Oreo Cookies Roughly chopped
  • 2 cups Extra Mini Marshmallows 100g, added at the end
  • 1/2 cup Mini Oreo Cookies For garnish

Equipment

  • 1 9x9 inch Square Baking Pan Lined with parchment paper
  • 1 Large Pot or Dutch Oven For melting marshmallows
  • 1 Silicone Spatula Greased for easy mixing

Method
 

Preparation
  1. Line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal.
The Melt
  1. In a large pot over low heat, melt the butter. Add the 10oz of marshmallows and salt, stirring until completely smooth and glossy.
  2. Remove from heat and stir in the vanilla extract.
The Assembly
  1. Quickly fold in the rice cereal and chopped Oreos until well coated.
  2. Add the extra 2 cups of whole mini marshmallows and fold briefly so they remain intact.
  3. Gently transfer to the pan. Press down lightly (do not pack). Top with mini Oreos and more mini marshmallows while still warm.

Notes

Do not overcook the marshmallows; stop as soon as they melt to keep the bars soft.
Use a greased knife for perfectly clean cuts.
